Pasta with shredded horse meat, arugula, and saffron is a simple yet flavorful dish, with the smoky taste of the shredded meat and the slight spiciness of the arugula! It is dressed with a quick sauce made from shredded horse meat, arugula, and saffron, to which you can also add a bit of cream for a creamy texture—though you can skip it if you prefer.

First, heat water in a pot to cook the pasta. Once it boils, add the pasta and cook it for the time indicated on the package from the moment the water starts boiling, stirring occasionally.

While the pasta cooks, prepare the sauce. Peel and slice the golden onion thinly, then add it to a pan with hot extra virgin olive oil and let it soften over medium heat, stirring with a wooden spoon.

Once the onion is softened, deglaze it by adding dry white wine and let it evaporate.

Meanwhile, open the package of shredded horse meat and add it to the pan with the onion. Sauté it over medium heat.

In a small bowl, pour a little pasta cooking water and dissolve the saffron sachet in it, stirring with a teaspoon.

Once the pasta is cooked, drain it, reserving a little of the cooking water, and add it to the pan. Then, add the diluted saffron, the Parmesan shavings, (cream if desired), and season with salt and pepper.

Toss the pasta with the sauce for a few minutes until it becomes dry and creamy. If needed, add a little more cooking cream and some water.
