Julienne of horse bresaola is a ready-to-eat specialty that combines convenience and flavor, ideal for enhancing dishes or enjoying as a quick and nutritious snack. Made from carefully selected horse meat, meticulously trimmed and dry-salted with a blend of salt, spices, additives, and seasonings, this delicacy is stuffed into collagen casings, sprayed with selected molds, and subjected to a drying process of about 10 days, followed by a minimum aging period of 5 weeks.  

At the end of the process, the casing is removed, and the meat is sliced into thin strips to achieve the characteristic julienne, packaged in controlled-atmosphere trays to preserve its freshness and aroma.
